Leek, Potato and Bacon Bake! (You don't have to have the surname Lawson)

2-3 rashers of unsmoked bacon

3 handfuls of chopped leeks
·
2 medium sized potatoes

2 Vegetable stock cubes
·
2 Tuc crackers
·
½ mozzarella ball
·
Butter
1. Dissolve the stock cubes in 500ml of water and
bring to the boil.
2. Add the leeks and potatoes and boil for 5
minutes.
3. Meanwhile, butter the dish and chop the bacon up
4. Drain the stock
5. Layer the potatoes and leeks in the dish and
pour 200ml of the drained stock over

Put the bacon pieces on top
7. Layer the mozzarella on top of the
8. Scrunch the Tuc cracker across the top of your
dish
9. Place in the centre of the oven, covered in
foil, for 20 minutes 200 degrees
10. After 20 minutes, remove the foil and put back
in the centre of the oven for 20 minutes
